Lime is cold pressed from the peel of Citrus aurantifolia, grown in Australia. The oil sits in glands in the rind rather than in the juice. The aroma is sweet yet tart, fresh and zesty, and the oil itself is visibly green, which the certificate of analysis for each batch records.
From bush to bottle
Citrus aurantifolia is grown in the warmer parts of the Australian citrus belt. As with lemon and orange, the oil is a companion to the fruit trade rather than a crop grown solely for distillation.
Cold pressing ruptures the oil glands in the rind mechanically and separates the oil without heat. That is what preserves both the green colour and the sharp zesty top note. Distilled lime, by contrast, comes out pale and noticeably flatter.
Nothing is added and nothing is rectified out. The certificate of analysis records appearance, colour, odour, specific gravity and refractive index, along with Australia as both country of origin and country of extraction.
Lime is one of the few oils commonly produced both ways, and the difference is obvious in the bottle. Cold-pressed lime is green, bright and sharp. Distilled lime is pale to colourless, sweeter, flatter, and much more like the flavouring in a soft drink.
The trade-off is real. Cold pressing carries across furocoumarins, heavy molecules from the peel that make the oil photosensitising on skin exposed to sun. Distillation leaves them behind, which is why distilled lime is used where sun exposure matters. Zea's is the cold-pressed one, so it keeps the character and comes with the caveat. Published composition puts limonene at 59 to 62% and gamma-terpinene at 15 to 17%.
